Fish, with a kick! These whole smoked fillets are made with our same house cure, plus a generous dose of cracked black pepper. Eat it straight up, or as an ingredient. Mix it into salads, spreads, or dips. Great on a bowl of grits or savory soup. Packed as individual fillets in vacuum-sealed bags. Ten fillets per case.

A Sailor’s Lunch
Our version of smoked fish with white pepper sauce. Green fish peppers are used for the piquant heat in this simple, delicious snack. (Tip: This snack is even better if the remoulade is refrigerated overnight before serving.)
Ingredients
- 1 lb. Rip Tide fillets, flaked into bite-size
pieces - ½ c. of Duke’s Mayonnaise
- ½ c. sour cream
- 2 Tbsp. cornichons, chopped
- 1 Tbsp. capers, chopped
- 1 Tbsp. cilantro, chopped
- 2 green fish peppers, seeded and diced
- 1 garlic clove, minced
- Juice from half a lemon
Method
To make remoulade, add mayonnaise, sour cream, cornichons, capers, cilantro, peppers, garlic, and lemon juice in a medium bowl. Mix until combined. At a dollop of sauce to a Ritz cracker, and top with fish. Repeat.
